Southern Sweet & Spicy Roasted Pork Butt

|Pork butt, boneless||4 to 6|
|Texas rub||1 cup|
|Sticky Fingers Southern Sweet & Spicy BBQ||3 cups|
- Using a large roasting pan, place the pork into the pan. Trim the majority of the fat from the top of the pork butt. Generously season the pork on all sides with the Texas rub.
- Cover with foil. Roast covered in a 350-degree convection oven for 3 hours.
- Uncover carefully, brush with 2 cups Southern Sweet & Spicy BBQ Sauce and continue to roast for an additional 30-45 minutes at 225 degrees.
- Serve with a side of sauce, carve or pull the meat needed per portion.
